Banana Chocolate Chip Cookies

This is a super simple recipe for healthier cookies that uses a few extra ripe bananas you may have.

Makes about 24 cookies

Ingredients

  • 2 ripe bananas

  • 1/3 cup brown sugar

  • 1/3 cup creamy peanut butter

  • 1 tsp. vanilla extract

  • 3/4 cup flour

  • 1/2 tsp. baking soda

  • 1/4 tsp. cinnamon

  • 1/4 tsp. salt

  • 2 cups quick cooking oats

  • 1/2 cup chocolate chips or chunks

Instructions

  1. Preheat oven to 350 degrees.

  2. Put the bananas in a large bowl and smash them until they're smooth.

  3. Using a large spoon or spatula, fold in the sugar, peanut butter and vanilla.

  4. Add the flour, baking soda, cinnamon and salt. Gently stir into the banana mixture until fully incorporated.

  5. Fold in the oats and chocolate chips. If the dough seems wet (which it may depending on how large your bananas are) add more oats.

  6. Line two cookie sheets with parchment paper. Wet your hands then form 1" balls of dough and put on sheets a few inches apart, about 12 cookies on each (or squeeze in a few more if you have extra dough). The dough will be sticky so keep wetting your hands as you go.

  7. Place cookie sheets in oven and bake for about 8-10 minutes or until lightly browned on the bottoms. Cool on a wire rack.
