You can add any spices you like to make this suit your taste. Cumin could be good, or thyme or oregano.
Ingredients
2 cups edamame, shelled (if you buy them frozen, thaw under hot water for a minute then pat them dry)
2 Tbl. olive oil
1 tsp. kosher salt
A few grinds of black pepper
1/2 tsp. garlic powder
Chile powder to taste
1/4 cup parmesan cheese, grated
Instructions
Preheat the oven to 400 degrees.
Line a baking sheet with parchment paper.
Put the edamame in a large bowl. Add the olive oil and toss until the edamame are well coated. Then add the rest of the ingredients and toss again until evenly distributed.
Pour the edamame mixture onto the baking sheet and spread flat.
Place baking sheet in oven and cook for about 15 minutes, keeping an eye on them to they don't burn. Toss them around mid-way through cooking to make sure they're browning evenly. When done, remove from oven and let cool for just a few minutes.
They can get mushy after they sit for awhile, so they're best served warm out of the oven.
