Easiest Chocolate Cake


Sometimes known as "Crazy Cake" or "Wacky Cake" (I have no idea why), this cake comes together quickly in one bowl, or you can even mix it right in the pan if you want. I add some booze which gives it some extra punch, but if you don't want to just use all water or even some brewed coffee instead. You can also add other flavorings like cinnamon or orange zest. Go crazy with it! This is vegan, by the way.





Ingredients:

  • 1-1/4 cup flour

  • 3/4 cup granulated sugar

  • 1/3 cup cocoa powder

  • 3/4 tsp. baking soda

  • 1/2 tsp. kosher salt

  • 1/3 cup canola oil

  • 1 tsp. vanilla extract

  • 1 tsp. balsamic vinegar (or white vinegar works)

  • 3/4 cup water

  • 1/4 cup booze (I use Jack Daniels, but rum or Grand Marnier would work)

  • 2 Tbl. chocolate chips (optional, and use vegan ones if you want)

  • Powdered sugar (optional)

Instructions:

  1. Preheat the oven to 325

  2. In a large bowl (or in a 8x8 inch square pan), mix together the flour, sugar, cocoa powder, baking soda and salt, making sure you get any lumps out.

  3. Add the canola oil, vanilla, vinegar, water and booze. Stir with a fork until the mixture comes together and forms a smooth batter.

  4. Pour the batter into the pan and sprinkle the top with chocolate chips if using.

  5. Place in the oven and bake for 25-30 minutes, testing the center with a toothpick.

  6. Cool the cake in the pan, then dust some powdered sugar on top if you'd like.
