This takes just a handful of ingredients and comes together fast. It's perfect for a busy weeknight dinner. Buy a good quality salsa as it's a big part of the flavor profile.

Ingredients
1 16-ounce jar of salsa
2 15-ounce cans black beans, drained and rinsed
Salt & Pepper
4 eggs
4 corn or flour tortillas
Cheddar cheese, shredded
Sour cream
Scallions (green onions), sliced
Instructions
Pour the salsa and drained black beans into a large skillet and heat on medium-high until they start to gently bubble. Cook until the mixture is hot.
Make four little wells in the mixture. Crack an egg into each well and season with salt and pepper.
Cook, covered, over medium heat until the eggs are done to your liking (about 3-5 minutes for slightly runny eggs).
Meanwhile, heat tortillas in another pan or in the microwave.
When eggs are done, put a portion of the bean mixture with an egg on each tortilla. Top with grated cheddar cheese, sour cream and scallions.
