These are delicious whether you're vegan or not. This recipe makes a good amount, so half it if you wish.
Ingredients:
2 cups all-purpose flour
1 tsp. baking powder
1/2 tsp. salt
1 cup boiling water
3 ounces unsweetened chocolate, chopped
3/4 cup cocoa powder
2 cups granulated sugar
1/2 cup vegetable oil
1 Tbl. vanilla extract
1/2 cup semisweet chocolate chips (make sure you check that they're vegan. Girards work well)
Instructions:
Preheat oven to 350 degrees.
Line a 13x9 inch baking pan with parchment paper with some hanging up the sides (to pull the brownies out later).
Whisk flour, baking powder and salt together in a bowl. In a larger bowl, whisk together the boiling water, chopped chocolate and cocoa powder together until well combined and the chocolate is melted. Whisk in the sugar, oil and vanilla. Stir in the flour mixture just until it's well combined, then fold in the chocolate chips.
Scrape the batter into the prepared pan and smooth the top. Bake until a toothpick inserted in the middle comes out with just a few moist crumbs attached, about 30 minutes. Let the brownies cool in the pan for an hour
Lift the brownies from the pan and place on a wire rack to finish cooling. When they are completely cooled cut into squares.
