Green Salsa Verde

This is best made in a small food processor, but you can chop all the herbs by hand instead. It's delicious on top of grilled meat or vegetables.

Ingredients

  • 1/2 cup parsley

  • 1/2 cup mint

  • 1/4 cup chives

  • 2 garlic cloves, grated or minced

  • 1 Tbl. fresh lemon juice

  • 1 tsp. kosher salt

  • Ground pepper

  • 1/4 tsp. red pepper flakes

  • 1/2 cup olive oil

Instructions

  1. Put all of the herbs, the garlic, lemon juice, salt, a few grinds of pepper and red pepper flakes in a food processor. Whirl until the herbs are finely minced.

  2. Add the olive oil and whirl a few more times to blend it in. Taste and add more salt or lemon as needed.
