This goes well with any grilled meat. The almonds make this dangerously addictive, so feel free to double the recipe.

Ingredients:
1 pound carrots
1/4 cup roughly chopped raw almonds
1 Tbl. honey
2 Tbl. olive oil
Salt and pepper
Instructions
Preheat the oven to 375 degrees.
Peel the carrots. If they're large, cut horizontally into thinner slices.
Toss the carrots, almonds, honey, olive oil, salt and pepper together on a baking sheet. It's easiest to toss with your hands to make sure everything is evenly distributed.
Spread carrots out in a single layer. If you find the carrots are crowded, use a second sheet so that they don't overlap (otherwise they'll steam).
Place in oven and cook for 15-20 minutes until the carrots are just getting tender. Keep an eye on the almonds. They'll get pretty browned, so you want to take the carrots out before all the almonds turn black (aka, burnt).
