I loved my mom's meatloaf, but I've switched it up over the years and this is my version. Feel free to do the same to make it your own. One loaf makes enough for four people plus some left over for sandwiches, but you can double it if you want even more leftovers.
Ingredients
1/2 cup julienned sun-dried tomatoes
Boiling water
1/2 cup ketchup
1/2 cup minced onion
1/2 cup chopped basil
1/2 cup shredded cheese (I usually use the provolone and mozzarella mix you buy in a package pre-shredded)
1 egg
1 cup breadcrumbs or panko
1 tsp. kosher salt and a few grinds of fresh ground pepper
1-1/2 lb. ground meet (turkey, pork, beef or a combination of those plus maybe some sausage)
Instructions
Preheat the oven to 350 degrees
Put the sun-dried tomatoes in a heat-proof bowl and pour the boiling water on top. Let the tomatoes sit so they soften while you do the next steps.
Combine the ketchup, onion, basil, cheese, egg, breadcrumbs and salt and pepper in a large bowl. Drain the sun-dried tomatoes and fold them into the mixture.
Add the meat and gently combine so everything is mixed together (I use my hands).
Spray a baking sheet with cooking spray or line with parchment paper. Form the meat mixture on the baking sheet in a loaf shape.
Place the baking sheet in the oven and cook for 1 hour. Remove from oven and let sit 10 minutes before slicing.
