Overnight Oatmeal

This comes together in just minutes before you go to bed and perfect for those days you've got a group going skiing. Steel cut oats work well because they don't get soggy. Don't use quick cooking oats, although you could use regular old fashioned rolled oats. Use a liner in your slow cooker pot because the bottom gets crusty and hard to clean.

Serves 4-6


Ingredients

  • 2 apples, peeled and chopped into 1" pieces

  • 2 cups steel cut oats 

  • 2 Tbl. brown sugar

  • 2 Tbl. cinnamon

  • Pinch of salt

  • 2 tsp. vanilla extract (optional)

  • 8 cups water

Instructions

  1. Line your slow cooker pot then place the peeled, chopped apples on the bottom.

  2. Lay the oats on top of the apples, then sprinkle them with brown sugar, cinnamon, salt and vanilla extract. Pour the water over the top. Don't stir.

  3. Set the slow cooker on low heat for 8 hours, then have it switch to warm if your slow cooker has that function. Otherwise just keep it on low heat and turn it off when you get up in the morning.

  4. When ready to serve, stir to get the apples disbursed throughout the oats. Serve with additional brown sugar and other toppings (fruit, nuts, etc) as desired.
