These are simple but flavorful meatballs that are extra moist because of the Ritz crackers, but you can substitute panko instead. I like to serve them over rice with a light salad on the side, but they'd also work well in pita pockets or even rolled into lettuce cups.
The side dipping sauce is optional, but adds a nice flavor bomb.
Meatball ingredients:
1 pound ground pork
1 Tbl. minced garlic (about 3 -4 cloves)
2 Tbl. peeled, minced ginger
1 Tbl. fish sauce
Several grinds of fresh pepper
1/2 cup crushed Ritz crackers (about 15 crackers)
Sauce ingredients:
1/4 cup mayonnaise
2 tsp. sesame oil
1 Tbl. soy sauce
Instructions:
Preheat oven to 425. Place a piece of parchment paper on a baking sheet, or coat it with cooking spray
Combine all of the meatball ingredients in a large bowl, mixing gently with your hands
Shape the meat into twelve 2" balls and place on the baking sheet
Place in oven and bake for about 20 minutes until they are cooked through, flipping the over about halfway through to evenly brown.
Meanwhile, combine the sauce ingredients together in a small bowl and serve on the side
