These are delicious little snacks and packed with protein - about 10 grams per cookie. They take just a few minutes to make and will last a few weeks in an airtight container.
Ingredients:
1/2 cup vanilla protein powder
1 cup nut butter (I use half almond and half peanut, but any combo works)
1/3 cup brown sugar
1 egg
1/4 tsp salt (unless your nut butter is salted, then leave it out)
1/4 cup chocolate chips
Instructions:
Pre-heat the oven to 350.
Mix all of the ingredients together in a bowl.
Using your hands or a scoop, place balls of dough onto a baking sheet lined with parchment paper - I make about 16 cookies, but you can adjust depending on how big you want them.
Press down a bit on each cookie to slightly flatten them.
Bake for about 9-10 minutes (check them at about the 8 minute mark as ovens have different speeds of cooking).
Let cool completely on the baking sheets.
Notes: Sometimes I add 1/4 cup oats. You can also add peanut butter chips if you'd like. Also, the recipe originally called for 1/2 cup sugar. I like mine a little less sweet, but give it a try and adjust as you wish.
