This is one of the easiest desserts to make and people love it, especially served warm with vanilla ice cream on top.
Serves 6-8
Ingredients:
About 4-5 large apples, peeled and sliced into thin wedges
1 tsp cinnamon, divided
1 tsp vanilla
1/2 lemon, juiced
1/2 cup brown sugar
1 cup rolled oats
1/2 cup slivered almonds
1/4 tsp salt
3 Tbl. cold butter
Vanilla ice cream (optional, kind of)
Instructions:
Preheat oven to 375 degrees.
Place apples in a large bowl. Add 1/2 tsp. cinnamon, vanilla and lemon juice and mix to distribute throughout the apples.
Pile apple mixture into an 8x8 baking pan.
In the same bowl, mix together the brown sugar, 1/2 tsp. cinnamon, oats, almonds and salt. Cut the butter into pieces and add it to the bowl. Use your fingers to squeeze it into the mixture until it's crumbly.
Distribute the topping evenly over the apples. Place in the oven and bake for about 35-40 minutes or until the apples are bubbling and topping is browned. If the topping gets brown before you think the apples are done, cover it loosely with aluminum foil. Cool slightly before serving. The topping gets more crispy as it cools.
I often make this ahead and place it back into a 300 degree oven to warm while we eat dinner.
